Simply Delicious Roasting Oil

I am a veggies girl! I love cooking them in many many ways but my favorite way to prepare them is roasting in the oven. I find that roasting vegetables brings out the flavor while keeping them juicy with as little or as much crunch at the same time. Whether you’re a foodie or a modest home cook like me, you should know that in order to roast properly you need a good oil so your veggies don’t burn. The main ingredients in this recipe are olive oil, garlic cloves, and freshly squeezed lemons – all of which I always have in my house!

Use this roasting oil for just about anything, from Brussel sprouts to carrots or even on a whole chicken - it will go well on anything and takes only a few minutes to make. Once prepared can be placed in the fridge for continuous use.

  1. Add olive oil, garlic cloves, salt, pepper and parsley to a blender
  2. Add in freshly squeezed lemon juice
  3. Pulse about 5-8 times or until garlic cloves have been chopped finely
  4. Place into a refrigerator safe container/bowl

Wrecking Tips

This roasting oil can be used on just about anything.

The oil doesn't freeze at all so when ready to use it on your food, just grab a spoon and scoop out the desired amount.

This roasting oil is adaptable- want to add a little honey for sweetness or spice it up with some red pepper flakes just get creative.
