I am a veggies girl! I love cooking them in many many ways but my favorite way to prepare them is roasting in the oven. I find that roasting vegetables brings out the flavor while keeping them juicy with as little or as much crunch at the same time. Whether you’re a foodie or a modest home cook like me, you should know that in order to roast properly you need a good oil so your veggies don’t burn. The main ingredients in this recipe are olive oil, garlic cloves, and freshly squeezed lemons – all of which I always have in my house!
