Roasted Sriracha Cauliflower Bites

I love all things spice and as a vegan finding new ways to turn old favorite recipes healthy has been an experience in itself. These Roasted Sriracha Cauliflower Bites will give you that bit of spice you love and the peanut dipping sauce helps cool it right down.

The best thing about this recipe is the sauce is really adaptable and if you don’t like as much spice you can add less or try a milder sauce. You can adjust the sweetness and the acidity to your liking but having the base correct is where most find trouble.

When I found his recipe, along with all the rest in “Thug Kitchen: Eat Like You Give A F*ck” by Matt Holloway and Michelle Davis, I was so in on making it my own.

The food in this book will have you cooking outside of your comfort zone and exploring new tastes and ingredients. The recipe book is a staple in my household for vegetarian recipes but  I will warn that you may want to keep this cookbook out of your kids’ reach.

Roasted Sriracha Cauliflower Bites

From the 30 Minute Meal series, Roasted Sriracha Cauliflower Bites is a great and fast weekday side dish or game night snack! Enjoy these spicy little bites with a peanut dipping sauce any day of the week.

Equipment

  • Oven

Ingredients

  • 1 medium heads cauliflower
  • 1/2 c flour
  • 1/2 c water

Hot Sauce

  • 2 tsp olive oil extra virgin or vegetable oil is fine as well
  • 1/4 c Sriracha or similar style hot sauce
  • 1/4 c vinegar
  • 1/2 tsp soy sauce
  • 1 tsp agave syrup
  • 1/2 tsp maple syrup *optional*

Peanut Dipping Sauce

  • 1/4 c warm water
  • 1/4 smooth peanut butter
  • 2 Tbls lime juice
  • 1 tsp ground ginger
  • 1 tsp soy sauce
  • 1 tsp maple syrup or agave syrup
  • 1 handful carrots or cucumbers optional for serving

Instructions

  • Preheat oven to 450F.
  • Lightly grease a rimmed baking sheet
  • Chop your cauliflower into florets
  • Whisk together the flour and water until smooth batter forms.
  • Toss the cauliflower into the batter until all the pieces are coated.
  • Spread cauliflower on a baking sheet and roast for 15 minutes. Mix them around halfway through roasting so that they get lightly browned on all sides.

The hot sauce

  • In a small saucepan, mix the oil, Sriracha, vinegar, soy sauce and syrups. Place to the side

The peanut dipping sauce

  • In a medium bowl, whisk together the water and peanut butter until smooth. Add the other ingredients and continue stirring until everything is incorporated. Refrigerate until ready to use.

Putting it together

  • After 15 minutes in the oven, dump the cauliflower into the big bowl of sauce and toss it with the hot sauce mixture . Make sure that all pieces are coated.
  • Return cauliflower to baking sheet, leaving any extra sauce in the bowl, and roast for another 7 minutes so that everything is warm and delicious.
  • Serve hot or at room temperature with the cucumber sticks or carrots and peanut dipping sauce.

Notes

If you feel the cauliflower is too wet or saucy, just pop it back into the oven. I love this with the peanut dipping sauce but you can try it with any kind of sauce and it'll still be great!
